Mushroom xacuti or tonak

Mushroom xacuti 

Ingredients:
Button mushrooms : 1 pkt
Potato : 1 big
Kokum rinds : 2 pieces 
Oil : 2 tblsp
Garlic : 3 - 4 cloves
Ginger : 1 inch
Onion : 2
Grated coconut : 1 & 1/2 cup
Garam masala : 1 & 1/2 tblsp
Tomato : 1 big
Salt : to taste
Sweetener : to taste 

Procedure :

Sauté chopped garlic, ginger and one sliced onion until translucent. Then add coconut and roast it on a low flame for 5 to 6 minutes.

Grind the roasted coconut along with some garam masala and water to make a course paste.

Wash the mushrooms and cut them into 4 or 6 pieces depending on the size. Also cut the potato and onion into dices; add kokum rinds and half a cup water and cook them on a low flame. 


Once the mushrooms and potatoes are cooked add the ground masala paste and diced tomato to it.

Add water if required to adjust the consistency and bring it to a boil. Add salt and sweetener to taste. 


Serve it rice, roti or bread.
