Xacuti
Xacuti is a spicy preparation of meat such as chicken, mutton, beef, pork, crabs, oysters, shark etc. in coconut and garam masala gravy.
Ingredients:
Meat of your choice : 1 kg
Grated coconut : 2 cups
Onion : 3
Tomato : 1
Garlic : 4 - 5 cloves
Ginger : 1 inch
Garam masala : 2 tblsp
Ginger garlic paste : 1 tblsp
Oil : 3 - 4 tblsp
Coriander : handful
Salt : to taste
Procedure :
Clean the meat, wash it and drain out all the water. Then add salt, ginger garlic paste, chopped coriander stems and some garam masala; and marinate it for about an hour.
Sauté one onion, garlic and ginger untill translucent. Then add coconut and roast it on a low flame for 8 to 10 minutes. Then take the coconut to the sides, making space in the center, and add chopped tomatoes; and sauté them till they are soft.
Sauté another onion, then add chopped tomato and sauté until it is soft.
Then add the marinated meat, one cup of water and cook it on a medium flame until it starts to boi, then switch it to low and cook till the meat is tender.
Grind the roasted coconut along with some garam masala and water to make a course paste.
Once the meat is cooked add the ground masala paste to it.
When it comes to a boil add finely chopped onion and cook for another five minutes.
Finally add some chopped coriander. You may add some coconut milk to make it more creamier.
Serve with rice, bread or roti.
