Coconut cream

Coconut cream is made of matured semidry coconuts, it can be used as a substitute for butter.

Ingredients:
Grated coconut : 4 cups 
Water : 2 & 1/2 cups

Procedure:

Grind the coconut in a mixer using water.

and extract the milk, use only the first and second extract.

Keep the coconut milk in the refrigerator for a day and allow the cream to float on top and become firm. Once it gets firm you can scoop it out easily or just freeze it for a while before scooping. This will yield about 1 cup cream.



Note: You can use the remaining residual water for making curries.
