Sano or cracked wheat cake
Sano is a cracked wheat cake, in which the wheat was traditionally cracked on a quern stone, an ancient mill stone or hand mill used for grinding grains.
Ingredients :
*Wheat : 2 cups
Grated coconut : 2 cups
Jaggery : 1 & 1/2 cup
Ghee : 3 tblsp
Cashew nuts : 8 - 10
Cardamom powder : 1 tsp
Salt : to taste
Water : 4 - 5 cups
Procedure:
Wash the wheat and coursely powder them using a spice grinder.
Grind Coconut with water and extract the milk 3 - 4 times (or just use ground coconut) add jaggery and bring it to a boil.
Lower the flame and slowly pour in the ground wheat into the coconut milk.
Nicely mix everything and cook until you get a sheera consistency. Then add cashew nut pieces, salt and two tablespoon ghee.
Heat a baking tray on the gas stove, add one tablespoon ghee and spread it out.
Then pour the prepared batter into the tray and smoothen the surface. Then bake at 180 degrees for 45 minutes to 1 hour or until it becomes firm and golden brown.
*You can also use ready-made broken wheat course rava instead of doing the above procedure:
