Mannos- Rice bhakri or rice cake
Mannos is a bhakri made of rice and coconut batter, cane jaggery or a mixer of cane and palm jaggery. It is either steamed or baked.
Ingredients :
Matta / par boiled (ukdo) rice : 2 cups
Grated coconut : 1 cups
Jaggery : 2 cups
Ghee : 1 tblsp
Cashew nuts : 7 - 8
Salt : to taste
Water : around 3 cups
Procedure:
Wash the rice thoroughly and soak it for 7 to 8 hour, then grind the rice using water and make a fine paste. Then coarsely grind the coconut and jaggery and mix it with the rice batter.
Add some more water if required and make the batter not very thick, nor too running, add cashew nut pieces (or coconut pieces) cardamom powder and salt to taste.
Heat a baking tray on a gas stove, add one tablespoon ghee and spread it out. Then pour the prepared batter into the tray and cook it for 2 - 3 minutes on a low flame to caramelize the bottom.
Then bake at 180 degrees for 45 minutes to 1 hour or until it becomes firms and golden brown. Or you may steam it. Prick a toothpick and check if it comes out clean.
You may cut it into pieces and fry it with ghee or coconut oil to caramelize it and make it crisp.
Serve for breakfast or as a tea time snack.
