Dhonos or jackfruit cake
Dhonos is jackfruit cake made from the juicy veriety of jackfruit.
Ingredients :
*Broken wheat course rava : 2 cups
Jackfruit puree : 2 cups
Grated coconut : 3 cups
Jaggery : 2 cups
Ghee : 3 tblsp
Cashew nuts : 10 - 12
Salt : to taste
Water : 4 - 5 cups
Procedure:
Extract jackfruit puree by passing the pulp through a grain mesh by rubbing the pulp on it's surface along with a bit of water in between. Or just blend it using a mixer jar (It gives a different texture though).
Grind grated coconut with the water and mix it with the jackfruit pulp.
Add jaggery and bring it to a boil.
It should be a very runny mixture at this point.
Lower the flame and slowly pour in the rava.
Nicely mix everything and cook until you get a sheera consistency. Then add cashew nut pieces and two tablespoon ghee.
Heat a baking tray on the gas stove, add one tablespoon ghee and spread it out.
Then pour the prepared batter into the tray and smoothen the surface.
Then bake at 180 degrees for 45 minutes to 1 hour or until it becomes firms and golden brown.
