Tomato Upma
This is another variation of upma which is sweet and tangy.
Ingredients:
Water : 4 & 1/4 cups
Rava : 2 cups
Oil : 2 tbls
Mustard : 1 tsp
Cumin : 1 tsp
Urad dal : 2 tblsp
Chana dal : 2 tblsp
Curry leaves : 2 sprigs
Asafetida powder (hing) : pinch
Ginger : 2 inch piece
Slit green chilies : 2 - 3
Tomatoes : 1
Ghee : 2 tblsp
Salt : 1 tsp
Jaggery : 4 tblsp
Sambhar powder : 1 tsp
Grated coconut : 2 tblsp (optional)
Tamarind pulp : 1 marble size ball
Procedure:
Dry roast rava on a low flame until it turns light brown.
Tempering:
Heat oil in a saucepan, add mustard, cumin, urad dal, chana dal (I prewash and dry the dals) and curry leaves. Let the dal turn golden brown.
Then add asafetida powder, chopped ginger, green chilies and chopped tomatoes.
Add in the roasted rava and stir for a few minutes.
Add sambhar powder and salt and mix well.
Add grated coconut.
Mean while boil the water, add jaggery and tamarind pulp.
Then add the boiled water and combine everything well. Switch the flame off and keep it covered for a few minutes.
Finally add ghee, dry fruits, nuts or seeds of your choice.
