Crostini omelette
Ingredients:
Bread roll / pav : 1
Egg : 1
Onion : 1/2
Tomato : 1/2
Capsicum: 1/2
Garlic : 1 or 2 cloves
Green chili : 1 (or chili flakes )
Green coriander (chopped) : 1 tblsp (optional)
Soy sauce : 1 tsp
Milk : 1 tblsp
Butter: 1 tsp
Oil : for frying
Salt : to taste
Procedure :
Chop the vegetables and begin with sautéing onions. Meanwhile crack an egg in a bowl, add milk, soy sauce, green chili, coriander and salt; and whisk them using a fork.
Slice the bread and keep aside
After the onions have softened add chopped tomato and capsicum and continue sautéing. You could also add in protein like mushroom, prawns, shredded chicken or chicken sausages etc. And cook for a while.
Then add the cooked ingredients into the egg mixture and mix it well.
In the same pan add oil and pour the omelette mixture in it, spread it around then place the bread slices over it along the circumference and then at the centre. Smear some butter over it, till then the omelette will cook from the lower side.
Flip it over and continue to cook until the bread turns crispy and golden brown.
