Fish mayonnaise

Fish mayonnaise is a fish salad which is made in combination with some vegetables and boiled eggs.

Ingredients : 
Kingfish : 750 gms
Oil : 1 tblsp
Onions : 2
Garlic : 5 - 6 cloves
Potatoes : 1
Carrot : 1
Eggs : 2
Pepper powder : 2 tsp
Chili flakes : 1 tsp (optional)
Vinegar : 1 tblsp
Mayonnaise : 300 gms
Capsicum : 1
Salt : to taste

Procedure:

Cut the fish into big chunks, wash it, apply salt and boil with some water. Add some coriander stems, celery stems or lemon leaves for fragrance. Discard the skin, debone and mash the fish with a fork.

Heat a pan, add oil and sauté the onions and garlic until they turn golden brown; add chopped potatoes to it and cook on a low flame. Sprinkle some water in between if needed.

When potatoes are half done, add chopped carrot and cook till they are soft. (Or cook the vegetables separately).

Add mashed fish to the veggies, put salt, vinegar, pepper powder, chili flakes and some mayonnaise. 

Meanwhile boil the eggs, chop them and mix it with the fish mixture.

Mix everything well, shape the mixture into a fish, coat it with mayonnaise and decorate with sliced capsicum or cheese lings.
