Kuvalyachi doce or Ash gourd doce
This recipe you can use for making other doce aa well like Jackfruit, pineapple, carrot, beetroot.
Ingredients :
Ash gourd (grated) : 5 cup
Coconut (grated) : 3 cups
Sugar : 4 cups
Rava : 1 tblsp (optional)
Cardamom powder : 2 tsp
Procedure :
Wash the melon, cut it into wedges and remove the seeds.
Grate the pieces using a grate leaving the peel or you may peel the gourd if you wish.
Lightly squeeze out some water from the gourd and use it to grind the grated coconut.
Measure the grated and lightly squeezed gourd to make desired quantity. Then add the grated coconut and cook it until the water has evaporated. Stir occasionally.
Then add sugar and cook it further. (Sugar should be half the quantity of gourd and coconut together)
As the water reduces, keep stirring continuously.
When the mixture starts leaving the sides, sprinkle the rava just to help it hold together.
Mix it well for another minute.
Then spread it over a greased tray and cut it into desired shapes.
