Salad bhaji
Salad bhaji is often an option for a quick breakfast, very easy to make with some basic ingredients.
Ingredients:
Oil : 1 tblsp
Mustard seeds : 1/2 tsp
Cumin seeds : 1/2 tsp
Curry leaves : 1 sprig
Onion : 1 big
Ginger : 1/2 inch piece
Garlic : 5 - 6 cloves
Tomatoes : 3 medium size
Green chili : 1
Turmeric : 1/2 tsp
Red chili powder: 1/2 tsp
Water : 1 cup
Coriander leaves : hand full
Salt : to taste
Sweetener : to taste
Procedure :
Heat oil in a sauce pan, put mustard seeds and allow them to splutter then add curry leaves and cumin seeds and let it fry for a few seconds.
Add sliced onions and sauté them until translucent.
Once the onions become translucent add chopped ginger and garlic and give it a quick stir.
Then add sliced tomatoes, chopped green chili, turmeric powder and chili powder, (Pepper powder optional).
Sauté the tomatoes until they become soft and little mushy.
Then add one cup water and bring it to a boil, and cook it further for another five minutes.
Finally add chopped coriander, salt and sweetener to taste.
