Spring onion pancakes or paratha
Spring onion pancakes is a Chinese dish.
Ingredients :
Spring onions : 6 pieces
Star anise : 1 star
Oil : as required
Salt : 1/4 tsp
Dough
All purpose/ wheat flour : 3 cups
Salt : to taste
Water : as required
Oil : 1 tblsp
Procedure :
Take the flour in a bowl, add salt and water to make a soft dough, finally knead in some oil.
Dry roast the star anise and powder it using a mortar and pestle. Finely chop the spring onions and mix the star anise powder in it. (Do not add salt in this as it will release a lot of water)
Take a small portion of the dough and roll it into a thin disc. Sprinkle a pinch of salt and some oil and spread it all over.
Then sprinkle some dry flour and the chopped spring onions over the roti.
Roll the roti keep the spring onions stuffed inside into a cylinder.
Secure both the ends of the cylinder by pressing them gently and then coil the cylinder to form a discoid.
Roll it again to make a disc of about 4 to 5mm thickness. (Do not roll it too thin )
Heat a pan, oil it and fry the pancakes on both the sides till golden brown.
Serve as is or with some szechuan sauce.
Serving : 8 - 9 pancakes
