Mung laddoo

Ingredients: 
Mung beans : 4 cups
Sugar : 1 cup
Ghee : 3/4 cup
Salt : 1/2 tsp
Cardamoms : 10
Nutmeg : 1/4 piece (optional)
Fennel seeds: 1 tsp (optional)

Makes around 30 - 35 lime size laddoos 

Procedure:

Wash the mung thoroughly, dry them on a kitchen towel and roast them on a low flame until all the beans turn light brown in colour; none of them should be green. 


Powder the roasted mung in batches using a spice grinding mixer jar. Sift it and grind the coarse powder again.

Melt the ghee in a pot, 

add the powdered mung and mix well.

Lightly roast the cardamom, then drop in the fennel seeds and switch off, this makes it easier to powder. Take some sugar and powder the cardamom, nutmeg and fennel along with it, then powder the remaining sugar aswell. Adding fennel seeds will help with the digestion of mung and also gives it a nice flavour, this can be omitted if you do not like the flavour. 


Then add the powdered sugar and salt to the mung mixture and mix thoroughly. 


Take a small portion of the mixture and roll into lemon size balls. This will make around 45 laddoos.
