Piquant Besan laddoo


In this recipe I have added some spices to achieve a bit tangy and spicy version of besan laddoos

Ingredients:
Besan : 3 cups
Sugar : 1 cup 
Ghee : 10 tblsp (around 3/4 cup)
Cardamom : 3
Cloves : 1 tsp
Cinnamon : 6 inch pieces
Pepper (white/black): 2 tsp
Fennel seeds : 1 tblsp
Nutmeg : 1/4 piece
Aamchoor (dry mango powder) : 1 tsp
Sesame seeds : 1 tblsp
Poppy seeds : 1 tblsp
Carom seeds (ajwain) : 1/2 tsp

Procedure:

Dry roast sesame seeds and poppy seeds and transfer them to a plate.

Then dry roast the spices on a low flame and powder them along with some sugar and aamchoor powder; then powder the remaining sugar as well and keep aside. 

Sift the besan using a medium - fine seive to remove any lump, this makes it easier to roast evenly. 

Then dry roast it on low flame for about 30 minutes, (keep stirring throughout the recipe) then add ghee and roast for 10 more minutes. 


Add in the powdered sugar, powdered spices and roasted seeds. 

Add some more ghee if required to hold the mixture together. Take a spoonful portion of the mixture and shape them into laddoos by rolling them on the hands.

You can also add other seeds, nuts, and dry fruits if you wish.

Serving : 18 - 20 laddoos
