Alle belle (Goan crepes)


Alle belle is a thin pancake stuffed with coconut and jaggery filling.

Ingredients:
Crepes:
All purpose flour (maida) : 4 cups
Egg : 2
Milk : 1/2 cup (optional)
Salt : 1 & 1/2 tsp
Vanilla Essence : 2 tsp
Lemon rind : 1 
Nut meg : a pinch
Water : around 4 & 1/2 cups

Filling:
Coconut : 2 cups
Jaggery : 1 cup
Cardamom powder : 1 tsp
Dry fruits and nuts : 2 tblsp (optional)

Procedure :

In a big bowl take flour, add milk (if you are not using milk add extra water in it's place), egg, salt, lemon rind, nutmeg and vanilla essence.

Add water and mix everything together making sure there are no clumps.

Keep adding water until you get a smooth runny batter.

Mix coconut, jaggery and cardamom powder. 

Grease a pan and pour the batter on the hot pan and swirl it around to make a thin crepe.

Flip the crepe and cook it on both the sides. This will yield around 16 crepes.

Take the crepe in a plate, place the coconut jaggery stuffing at one side, 

and rolls it like spring rolls.
