Aloo gobi

Aloo gobi 

Ingredients : 
Cauliflower : 1/2 kg
Potatoes : 2 medium size
Green peas : handful (optional)
Oil : 3 tblsp 
Onions : 2 medium size 
Tomatoes : 2 medium size
Green chili : 1 or 2 
Ginger : 1 inch piece 
Garlic : 8 cloves 
Pepper : 1/2 tsp
Cumin : 1/2 tsp
Green coriander : handful 
Salt : to taste 
Sweetener : optional 

Procedure : 

Wash the cauliflower thoroughly, cut into florets and put them in salt water for a while. Here I have also used the tender leaves and peeled stem. Cut the florets into two or four if they are big and slit the stem so that they cook faster. 

Cut chilies and ginger into pieces; put them in a mixer jar, add garlic cloves, cumin, pepper and make a course paste without adding any water. (You can also add some tender coriander stems to this)

Heat oil in a sauce pan, sauté sliced onions until translucent then add in the ground paste and sauté further for half a minute. 

Then add in sliced tomatoes and give it a mix and let them cook for another half a minute. 

Next add the potato, some turmeric powder, half a cup water; cover it with a lid and let it cook over a low flame for five minutes. (You may also boil the potatoes (whole) separately and then peel and cut them and add in later after the cauliflower is cooked)

Then add the cauliflower and green peas (optional). Add another quarter cup water if it is dry. Cover again and let it cook until the potatoes are soft. 

Once it is almost done add salt and some garam masala and give it a mix. Cover and cook for some more time until the potatoes and cauliflower stems are soft. 

Finally you can add some chopped coriander leaves.
