Soya chili fry

Soya is a good source of protein, you can use it for making curries along with other vegetables or meats or dry preparation.

Ingredients :
Soya chunks : 2 cups
Oil : 3 - 4 tblsp
Onions : 2 big
Tomato : 1 medium
Capsicum : 1 medium
Green chili : 1 - 2
Ginger garlic paste : 1 tsp
Tomato ketchup : 1 tblsp
Soya sauce : 1 tblsp
Jeere meere masala : 2 tsp
Salt : to taste
Green coriander : handful

Procedure :

Wash the soya in water, then boil some water in a sauce pan and soak the soya chunks in it and keep it covered for about 15 minutes.

Mean while heat 1 tblsp oil in a skillet and sauté sliced onions until translucent. Then add sliced capsicum, chopped garlic and slit or chopped green chili and sauté it on high flame for a minute; and transfer them all into a bowl.

Now, add 2 more tblsp of oil in the same pan, put ginger-garlic paste and fry it for a minute.

Drain out the water from the soya chunks and squeeze all the water out; then put it in the pan along with salt and fry it until it gets a slight brown colour.

Put them along with the sautéed vegetables, add ketchup, soya sauce and Jeere meere masala or any other masala of your choice and mix well.

In the same pan, heat some more oil and sauté chopped tomatoes until they become soft, then add in all the other ingredients and mix well. (You may also add in a Maggie stock cube for some extra umami flavour)

Finish it with some chopped fresh coriander.
