Hummus

Hummus is an Arabic dip accompanied with khubz and grilled meat.

Ingredients :
Chickpeas : 1 cups (raw)
Garlic : 4 cloves 
Pepper powder or pepper corns : 1/2 tsp
Tahini (or sesame seeds) : 1 tsp 
Lime juice : of 1 lime (around 2 tblsp)
Salt : to taste
Paprika (or chili powder) : two pinches
Olive oil : 6 - 8 tblsp 

Procedure :

Soak the chickpeas overnight, next day wash them well, put them in a cooker, add enough water to cover them and cook them until soft. Or use the canned ones (2 cups).

If you don't have tahini sauce, dry roast the sesame seeds, crush pepper, slice the garlic and blend it using a spice grinding jar. 


Then add the chickpeas and blend them with very little water which you used for boiling or from the can.
Or roast the sesame seeds and blend it along with the chick peas, garlic, and pepper powder to make a smooth paste. 

add the chickpea water, lime juice, salt and olive oil and keep blending until you get a smooth consistency.

Once you add the oil to the hummus and blend it, it will start emulsifying and will look creamy. Check for seasoning at this point and add salt and lime according.
