Chipotle mayonnaise or chili mayonnaise

Chipotle mayonnaise is a Mexican mayo made of chipotle peppers, which goes well with tacos, nachos, French fries etc. You could use it for burgers and shawarmas too.

Ingredients :
Kashmiri chilies : 2
Garlic : 2 cloves
Mustard seeds : 1/4 tsp
Egg yolk : 1
Vinegar : 2 - 3 tblsp 
Sugar : 1 tblsp 
Salt : 1/4 tsp
Vegetable oil : 1 cup
Ketchup : 1 tblsp 

Procedure :

Roast the garlic with the peel on over a low flame. Meanwhile deseed the chilies and put them on the pan along with garlic over low heat for a minute just to make them crisp. Make sure you don't burn them as the sauce will taste bitter. 

Powder the roasted chilies, peeled garlic and mustard seeds along with sugar and salt.


Then add the vinegar and blend well to make a smooth paste.

Transfer the paste into another bowl, add the egg yolk and mix it well using a spoon.

Then add 2 tblsp of oil at a time and mix it with a spoon until the oil gets emulsified. Continue adding the remaining oil (2 tblsp at a time) or use an oil dispenser to pour in the oil slowly while you stir constantly and mix well. Add the ketchup in between or in the end. 

Check for seasoning and add salt and vinegar as per your preference.
