Lime pickled in salt or khollantle limbu

Salted lime goes well as an appetiser with any meal and it is also a very good source of vitamin C.

Ingredients :
Lime : 6
Green chilies : 6 - 8
Ginger : 1 inch
Salt : 2 tsp
Turmeric : 1/8 tsp
Asafetida (shankar brand) : a pinch

Procedure :

Wash the limes, chilies and dry them them. Wash and peel the ginger. You can also add some raw mango wedges if in season.


Cut the limes into eight pieces, cut the green chilies into pieces and slice the ginger. 

Add salt, turmeric powder and asafetida (you can use the powdered asafetida aswell) and give it a mix.


Put the mixture into a sterilized glass jar, tightly secure the lid and give it a shake every day. Do not open the jar for one week so that the skin of the limes gets soft with the pressure of the gasses released by them. 

After one week you may keep it in refrigerator.
