Dates pickle 

Ingredients :
Fresh tender dates : 500 gms
Ginger: 2 inch
Garlic : 2 bulbs / 50 cloves (small variety)
Green chilies : 4 - 5
Tamarind : 1 lemon size ball
Vinegar : 3/4 cup
Oil : 3/4 cup
Mustard : 2 tsp
Fenugreek seeds : 1/2 tsp
Cumin seeds : 1 tsp
Fennel seeds : 1 tsp
Asafetida : 1/4 tsp
Turmeric powder : 1/2 tsp
Chili powder : 4 tblsp 
Jaggery : 2 - 3 tblsp 
Salt : 3 tsp

Procedure:

Wash the dates, dry them, deseed and cut them lengthwise or into semi rings. You can steam them separately if you wish. 

Clean the tamarind and soak it in vinegar. 

Dry roast 1 tsp mustard and the fenugreek seeds.

Grind chopped ginger, half the garlic, soaked tamarind, cumin, fennel seeds and the roasted mustard and fenugreek seeds using some vinegar.


Heat oil in a pan, add mustard and allow them to splutter. Then add curry leaves, chopped green chilies and remaining chopped garlic and sauté for a while. 

Then add the ground masala and cook it for a minute, add chili powder, turmeric powder and salt and mix it well. 

Add the cut dates and combine everything together.

Then add jaggery and the remaining vinegar and mix it and keep covered until the dates become soft. Keep stirring in between. (or you can pre steam the dates and then add them to the pickle masala. Or you can also use dry dates and skip the jaggery in that case. )

Allow the pickle to cool down then store it into sterilized glass jar.
