Tom yum lamb chops or mutton chops
Tom yum mutton chops is one of the outcome of my tom yum obsessions.
Ingredients:
Marinade :
Salt : to taste
Soy sauce : 1 tblsp
Ginger garlic paste : 1 tsp
Pepper powder : 1/2 tsp
Chilli powder : 1 tsp
Lime juice : 2 tblsp
Sugar : 1/4 tsp
Other ingredients :
Oil : 1 tblsp
Mutton ribs : 1/2 kg
Garlic : 6 - 8 cloves
Green chili or Thai Red chili : 1
Galangal : 1 cm piece
Kaffir lime leaf : 1 (or use a piece of the rind)
Lemon grass stem : 1
Procedure :
Wash the mutton and marinate it with salt, soy sauce, 1 tblsp lime juice, ginger garlic paste, pepper powder, chili powder and some sugar. Use a bit less salt as the soy sauce also will be salty. Then let it rest atleast for an hour.
Heat a pan, add oil and place the marinated mutton into the pan. Sear the mutton on each side on a high flame, then cover and let it cook on a low flame until all the water has dried up.
Mean while prepare the lemon grass by removing the leaves and the outer hard layers over the stem and remove the midrib of the kaffir lime leaf.
Finely chop the lemongrass stem, kaffir lime leaf, galangal, garlic, green or Thai red chili. Then mince them using a knife on a chopping board or by using a mortar and pestle.
After the mutton is cooked mix in the minced ingredients into it and let it cook for another 2 minutes.
Sprinkle some water if the pan gets too dry and scorched. Finally add a tablespoon of lime juice and mix well.
