Mutton Rogan Josh
Mutton rogan josh is a lamb curry popular in the Kashmiri.
Ingredients :
Mutton : 1 kg
Mustard oil : 5 - 6 tblsp
Bay leaves : 2
Cloves : 4
Cinnamon : 1 inch piece
Black cardamom : 1 (crushed)
Cumin : 1/2 tsp
Onion : 3 (medium)
Water : 1 cup
Yogurt : 4 - 5 tblsp
Salt : to taste
Masala:
Tomatoes : 4 big (roughly chopped)
Kashmiri chillies : 10 (big size)
Ginger : 2 inch piece
Garlic : 8 cloves
Cloves : 8
Cinnamon : 3 inch pieces
Pepper : 10 corns
Cardomom : 2 pods
Star anise : 1 star
Fennel seeds : 1 tsp
Lichens (dagadphool) : 1 inch piece (optional)
Procedure :
Wash the mutton, apply salt and keep aside.
Grind the masala ingredients without using any water to make a fine paste and marinate the mutton in it. You may deseed the tomatoes if you want.
Heat oil in a pot, add crushed black cardamom, cloves, cinnamon, Bay leaves and cumin seeds and sauté for a while till it becomes aromatic.
Then add sliced onions and sauté till light brown.
Add marinated mutton, stir and mix it well for a minute. Add one cup water and cook till it's done.
Finally add whipped yogurt and bring it to a boil. Check on the salt if needed.
