Jackfruit sala (salted jackfruit) bhaji

Salted jackfruit bhaji is made of the tender jackfruit pods which are preserved using salt. 

Ingredients:
Brining:
Unripe jackfruit : 1
Sea salt : handful 
Cooking:
Oil : 2 tblsp
Mustard : 1 tsp
Curry leaves : 1 - 2
Cumin seeds : 1/2 tsp
Onion : 1
Turmeric powder : 1/4 tsp
Green chilies : 1 - 2
Salt : to taste 
Sweetener : to taste 
Grated coconut : 1/2 cup

Procedure : 

Cut the jackfruit and allow the sap to ooze out (wipe off the sap using paper or coconut coir); then cut it into smaller pieces and discard the center stem. remove the pods and tear into pieces (The cutting process will make the knife and hand sticky with the sap, you can use oil to clean your hands and the knife can be heated on fire and then wiped out using newspaper, keeping in mind that the knife is hot)

Cut the pods into strips, add sea salt and massage it well.


Put the salted pieces into a glass or porcelain jar or an earthen pot. Press them tightly and place some stones over them to keep them pressed. It will release some water. Secure the lid with a cloth if required to keep it safe from fruit flies. 

Preparation: after 2 months 

Put the salted jackfruit pieces (about 1 bowl) in water, wash thoroughly 3 - 4 times and leave it in water for 15 minutes to neutralize the salt. 

Heat some oil, add mustard, allow them to splutter then add cumin, chopped onions, green chilies, turmeric powder and sauté till onions are translucent. 

Then add the washed jackfruit, slit green chilies and turmeric powder; cover with a lid and cook till it becomes soft, sprinkle some water in between if required. 


Finally add grated coconut and sweetener and cook for another 1 - 2 minutes. Adjust the salt if needed.
