Toracho ros or mango curry
Udda methi can be made of fruits such as under ripe mango, bilimbi, hog plum, star fruit or moringa drumsticks.
Ingredients:
Mango : 1
Coconut : 2 cup
Spicy dry red chilies : 3 - 4
Turmeric : 1/2 tsp
Pepper : 5 - 6
Jaggery : 2 tblsp
Mustard : 1 tsp
Urad dal : 1 tsp
Fenugreek seeds : 1/2 tsp
Asafetida (shankar brand hing) : 1 inch piece
Curry leaves : 2 sprigs
Green chilies : 1 - 2
Oil : 1 tblsp
Salt : to taste
Procedure:
Wash, peel and cut the mango into pieces, apply salt and keep aside.
Dry roast urad dal and fenugreek seeds.
Grind the grated coconut, red chilies, pepper, turmeric and half of the roasted dal and fenugreek.
Heat a pot, put oil, mustard, asafetida, curry leaves, slit green chilies and the remaining roasted dal and fenugreek seeds.
Then add in the mango pieces and water and cook it over a low flame until they become soft ( you can also add a few moringa drumsticks along with mango).
To this add the ground coconut and water as per the desired consistency, bring it to a boil and switch off. Check on salt and sweetness.
Serve with plain rice and other accompaniments such vegetables, papad pickle, etc.
