Crispy Fried Chicken KFC style

Fried Chicken is loved for it's crispy outer crust. My son asked for it during lockdown, so I tried the videos available on YouTube, but didn't get the desired results. I don't know how it is actually made but this is how I was Intuited.

Ingredients:
Oil : for deep frying
Chicken (with / without skin) : 1 whole 
Salt : to taste
Vinegar : 1 tblsp
Milk / curd : 5 tblsp
Ginger garlic paste : 1 tsp
Chili powder : 1 tsp
Pepper powder : 1 tsp
Oregano : 1 tsp
All purpose flour (maida) : 5 - 6 tblsp

Crust:
All purpose flour (maida) : 2 cups
Salt : 1/2 tsp
Baking power : 1 tsp
Chili powder : 1 tsp
Pepper powder : 1 tsp
Oregano : 1 tsp

Procedure:

Cut chicken into big pieces.

Marinate the chicken pieces with salt, vinegar, milk, ginger garlic paste, chili powder, pepper powder, oregano and flour. Adding flour will make the marinade sticky which will hold on to the coating easily. (You can add some soya sauce as well in the marinade.) Refrigerate overnight or at least for 2 - 3 hours.

Take a big bowl add flour, salt, baking powder, chili powder, pepper powder, oregano and mix well. 

Sprinkle water (little at a time) and mix it with a fork. Then gently massage the mixture between your fingers to flatten them; add more water and repeat the process until you get a flat cornflakes texture. See that you don't over do this, as it will result into big round chucks which will harden the outer crust. You should get flat flaky crumbs.

Coat the chicken pieces in the prepared crumb pressing it gently. (You can use the same crumb to coat prawns, paneer, etc.)

Heat oil in a pan and deep fry the chicken well on a medium to low heat.

Serve with French fries.
