Chakli


Chakli is a crispy teatime snack which is an excellent option to carry to school or at work.

Ingredients :
Urad : 3 tblsp
Cloves : 9
Cinnamon : 3 inch piece
Pepper : 1 tblsp
Coriander seeds : 1 tblsp
Asafetida (shankar brand hing) : 1/2 tsp
Fenugreek : 1/4 tsp
Fennel seeds : 1 tblsp
Cumin : 1 tblsp
Rice flour : 1 cup
Besan : 1 cup
Salt : 1 tblsp
Sesame seeds : 3 tblsp
Turmeric powder : 1 tsp
Red chili powder : 2 tblsp
Carom seeds (ajwain) : 1 tsp
Water : 2 cups
Grated jaggery : 6 tbsp
Tamarind pulp : lemon size ball
Grated coconut : 1 cup
Butter : 3 tblsp
Rava : 1 cup 

Procedure:

Dry roast the spices - 
Cloves, cinnamon, pepper, coriander seeds, asafetida, fenugreek, fennel seeds, cumin and urad dal. Putting the bigger ones first.

Powder them using a spice grinder.

In a big bowl take rice flour, besan, sesame seeds, turmeric powder, red chili powder, ajwain, salt and the ground spices and mix well.
 
Soak tamarind in water and extract the pulp.

Grind coconut, jaggery and tamarind pulp.

Measure one cups of the ground paste.

Add another cup of water and butter and bring it to a boil.

Add rava and cook it till it thickens like sheera. 

Add the flour mixture and combine everything together. Keep covered and allow it to cool slightly.

Then transfer to a plate, knead well and make a stiff dough, let it rest for few minutes.

Put the dough into chakli shaper, press down and arrange into a coils.

Deep fry on a low flame.
