Sardines in tomato sauce


Sardines stewed in tomato sauce are a good source of calcium 

Ingredients:

Sardines (medium size) : 1 kg

Tomatoes (medium size) : 4
Garlic : 4 cloves
Pepper : 8 corns
Vinegar : 2 laddles full
Tomato ketchup : 2 tblsp
Spicy dry red chilies : 4 - 5
Fresh coriander : handful
Water : 1/2 cup
Salt : to taste
Olive oil : 1 laddle full

Procedure :

Clean the fish, apply salt and set aside.


Cross score the tomatoes at the steam, insert a knife on the opposite side and set it over a live flame on the gas stove until the skin turns black and gets detached. Then peel off the skin, deseed the tomatoes and cut them into pieces.


Put the tomatoes into a mixer jar add garlic and pepper corns and blend it into a paste.


Place the sardines into a pressure cooker, add the prepared tomato puree, add ketchup, vinegar, finely chopped coriander, deseed and split dry chilles. Then combine everything well.



Add water just enough to cover all the sardines and cook them over high flame until first 3 whistles then switch the flame to low and let it cook for 45 minutes.



After 45 minutes switch off the flame and allow it to cool until the steam is released. Then open the lid, add olive oil and give it a swirl so that it is evenly distributed.


Use it to make sandwiches, salad or just serve as a side dish with rice.
