Mutton soup
Mutton soup is a very healthy soup which is usually had during winters, rainy season or even post delivery and when someone is suffering from cold.
Ingredients :
Mutton bones : 1 bowl
Water : 5 - 6 cups
Oil : 1 tblsp
Onion or leek : 1
Tomato : 1
Potato : 1 (optional)
Ginger (chopped) : 1 inch
Garlic (chopped) : 5 - 6 cloves
Green chili (chopped) : 1
Coriander leaves : handful
Pepper (whole or powder) : 1/2 tsp
Cumin seeds : 1/2 tsp
Coriander powder : 1/2 tsp
Vinegar/ lime juice : 2 tsp
Salt : to taste
Procedure :
Take a large sauce pan, heat oil in it, add chopped onion / leek and sauté it until it becomes translucent. Then add chopped tomatoes and sauté further until it becomes soft.
Wash the bones and put them into the pan along with 3 cups of water and allow it to boil. Meanwhile peel a potato and cut it into half or quarter and add it to the boiling broth. Then cover it with a lid and let it cook over a low flame for 20 minutes.
Wash and clean the coriander separate the tender stems from the leaves and chop them separately. Chop ginger, garlic and green chili, put them in a mixer jar, add coriander stems, cumin seeds, coriander powder, pepper or pepper powder and grind it to make a course paste.
Put the paste into the broth and let it cook for another 5 minutes. (Put some water into the mixer jar to remove the paste and pour it into the soup)
Remove the boiled potatoes from the broth and mash them using a fork, add some water or broth to make it like a paste then return it back to the broth. (You may skip adding the potato if you want to avoid)
Finally add in the chopped coriander leaves, vinegar/lime and salt to taste. Then switch off.
Serve hot.
