Melting moment cookies
Ingredients :
Butter : 100 gmsSugar : 1/2 cup (powdered)
Egg : 1
Flour : 1 & 1/4 cup
Baking powder : 1/2 tsp
Vanilla essence : 1 tsp
Cornflakes : around 100 gms
Procedure :
Take a large, clean and dry bowl. Put softened butter in it and whisk it along with powdered sugar until it becomes light and fluffy.
Then add an egg and vanilla essence and whisk again.
Sift flour and baking powder together and then add it to the butter mixture. And combine it well.
Lightly crush the cornflakes and put them in a bowl. Drop a teaspoon full dollop of the prepared batter into the crushed cornflakes and dredge it with the crumbs and shape it into a cookie.
Here I was falling short of cornflakes, so I used fresh grated coconut for dredging. You could also use dessicated coconut or slivered nuts if you have.
Preheat an oven and bake it at 180 degrees for around 30 minutes.
This will make around 20 - 22 cookies
