Vegetable Pulau
Vegetable Pulao is a very nice way to incorporate vegetables in a meal where in you can add vegetables of your choice.
Ingredients :
Rice : 2 cups
Cauliflower (florets) : 1 cup
Carrot : 1 medium size
Green peas : 1/2 cup
Onion: 1
Tomato : 1
Ginger : 1 inch piece
Garlic : 4 - 5 cloves
Coriander : handful
Mint leaves : 1/2 cup
Oil : 3 - 4 tblsp
Cinnamon : 2 inch pieces
Cloves : 7 - 8
Star anise : 1/2
Cardamom : 3
Cumin : 1 tsp
Stock cube : 1 or 2
Water : 4 cups
Butter / ghee : 1 tblsp
Procedure :
Wash the rice thoroughly and soak it in water for 30 to 45 minutes. Mean while cut the vegetables and keep ready.
In large pot, heat oil, add the bigger spices and fry them until they change colour and become aromatic, then add cumin and crushed cardamoms.
Now add chopped onions and sauté them until translucent, then add chopped tomatoes and sauté further until they become mushy.
When everything is well sautéed, add finely chopped ginger, garlic, green chili and coriander stems (or make a paste of all the four ingredients along with mint ) and sauté it for a while along with turmeric and stock cubes.
Now add diced vegetables of your choice and mix it well. Then add 4 cups water and allow it to boil.
Mean while drain out the water from the rice and leave it for 1 to 2 minutes.
When the water comes to a boil, add the rice and salt to it; put the lid on and cook it over a low flame.
When the rice is almost done, add finely chopped coriander and mint, and give it a quick mix, making sure that the rice doesn't break. Then cover it with the lid and cook further till the water dries up.
