Karela / Bitter gourd bhaji
Bitter gourd or karela bhaji
Ingredients :
Bitter gourd : 2 (medium )
Mustard seeds : 1 tsp
Onion : 1 big
Turmeric : 1/2 tsp
Pepper powder : 1/4 tsp
Grated coconut : 3 tblsp
Coriander : handful (optional)
Salt : to taste
Procedure :
Wash the bitter gourd, trim the edges and cut lengthwise. Using a spoon scoop out the seeds and chop it finely
Apply salt to the gourd and massage well, then cover it with a lid and keep some weight over it.
After an hour wash them in fresh water and squeeze out the water from them. Heat oil in a pot, add mustard seeds and let them splutter. Then add the chopped gourd pieces, mix well and let it cook on a low flame keeping it covered.
Once the gourd is half done, add chopped onions green chili, turmeric and pepper powder. Cook it further until the onion becomes soft.
Finally add grated coconut and chopped coriander leaves. Check for salt and add more if required or if it tastes bitter.
