Short bread cookies
Scottish short bread cookies you can make them plain or flavour them with some chocolate chips or powdered instant coffee or a combination of chocolate chips and orange zest.
Ingredients :
Salted butter : 250 gms
Sugar : 3/4 cup
Vanilla essence : few drops
All purpose flour (maida) : 2 cups
Rice flour : 1 cup
Baking powder : 1/4 tsp
Procedure :
Powder the sugar and whisk it along with butter and vanilla essence to attain a fluffy cream consistency.
Mix all purpose flour, rice flour and baking powder together then add it to the butter cream and incorporate everything well.
Bring everything together to form a ball without kneading.
Spread half of the prepared mixture over a butter paper and roll it out into a rectangular shape using a rolling pin. Dust some dry flour to do so if it sticks to the rolling pin. Cut the dough into rectangles and prik each of them using a fork.
For the remaining dough I have added some chocolate chips and spread it into two small discs. Shape the circumference by pressing it with two fingers or use a fork. Then cut it into eight sectors each and prik it with a fork.
Bake it at 200 degrees Celsius for 15 -20 minutes.
Cut once again after you finish baking as they tend to stick to each while baking.
