Wheat halwa with Coconut milk
Ingredients :
Wheat : 2 cups
Grated coconut : 2 cups
Sugar : 5 cups
Water : 3 cups
Ghee : 1 cup
Melon seeds : 2 tblsp
Chopped cashew nuts : 2 tblsp
Cardamom powder : 2 tsp
Saffron: 1/4 tsp
Procedure :
Day 1: Clean the wheat , wash it and soak it in water for 24 hours. Change the water once in between.
Day 2: Next day wash the wheat thoroughly in water and grind them to a fine paste.
Pass it through a strainer and extract the juice. Then add more water to the ground wheat and extract it's juice for 2 more times. Let the juice rest for a day and allow it to settle the precipitate.
Day 3: Next day discard the floating liquid by decantation and add fresh water to it and give it a stir; let it precipitate through another day.
Day 4 : Next day discard the floating water again and keep aside.
Grind coconut using water and extract the milk, add more water and extract again (total 4 cups of coconut milk)
In a heavy bottom pan take the wheat extract and sugar and mix it well, then add the coconut milk and mix again.
Put on the flame and keep stirring until the halwa form one mass. Keep adding 1 tblsp ghee at a time in between as the halwa progresses. Finally when it stops bubbling and start leaving the sides take a small quantity on a plate, allow it to cool, then check if it becomes firm. If so, add the seeds, nuts, cardamom powder, saffron, some food colour and ghee.
Mix everything well.
Then transfer it into a tray and allow it to cool down. Once it is set you can cut it into desired pieces.
