Masala tea powder

Masala tea powder is a blend of aromatic spices which becomes very handy when making masala tea or turmeric latte and even to eggnog.

Ingredients :
Ginger : 600 gms (when fresh)
Tulsi leaves : 1 cup (when fresh)
Cardamom : 1/2 or 3/4 cup
Cinnamon : 1/3 cup
Cloves : 1/3 cup 
Pepper : 1/3 cup 
Fennel seeds : 1/4 cup
Nutmeg : 4 nos.
Mace : 2 nos. (optional)
Pippali (long pepper) : 2 - 3 sticks (optional)
Edible lemongrass oil : 1 tsp (optional) Or 
Lemongrass stems : 5 - 6 nos. (To be dried)


Procedure:

Wash, chop and sun dry the ginger for 3 days or until crisp depending on the weather. You could also take 5 to 6 stems of lemongrass wash them, slice and set in the sun to dry and use them instead of the oil.

Wash the tulsi leaves and sun dry or pan dry them on low flame until they turn crisp. Crush the nutmeg into pieces.  

Mix all the ingredients and powder them using a spice grinding jar of a mixer.

Here I have added 1 tsp pippali powder to the powdered spices. It gives the tea an extra spice and also gives relief from cough and congestion. Avoid using pippali in summers as it is warm in nature. You could store one portion separately without pippali for the summer. At this point also add the lemongrass oil to the spice powder and mix it well.

Store the powder in 3 to 4 small air tight glass jars so that they don't lose their flavours and keep refrigerated for a longer usage. Use 1/2 tsp masala powder along with 2 tsp tea powder for 2 cups of tea. Or use for making haldi milk along with turmeric powder.
