Phulki or puffed roti

Phulki is a lean wheat flour roti, puffed over live flame.

Ingredients : 
Wheat flour : 4 cups
Salt : 1 tsp
Water : approximately 2 & 1/4 cup 

Procedure :

Mix flour, salt and water; and knead to make a soft dough.


Make small lemon size balls.

Roll the balls into round discs with one millimeter thickness.

Heat a pan and put the rolled dough on the pan and lower the heat. You will see it changing it's colour. (The surface which is touching the pan will be exposed to live flame later hence do not let it over cook.)

Once the colour changes, flip it over (first flip). You will see tiny white patches here and there on the other side.

Let it cook on this side until you see small air pocket forming inside.

Now flip it to the other side (second flip) and slid on the live flame, twirling it and exposing all four sides to the flame.

Then put the roti on direct flame for a few seconds on each side.

You will have the puffed roti ready to serve.
