Coconut toddy or soor
Toddy or soor is the sap extracted from a palm tree, it is sweet when fresh and later turns sour. It is used for leavening food and making jaggery, vinegar and alcohol.
Here I have used Coconut water and sugar to simulate it.
Ingredients :
Coconut water : 2 cups
Sugar : 6 - 8 tbls
Procedure:
Put the coconut water and sugar in a glass jar, lightly screw the cap on top and keep it in a cool and dark place for about 24 hours.
Next day you will see it become a bit cloudy or some bubbles forming on the inner surface of the glass which means it is ready for use.
You can also use kefir grains to ferment the coconut water.
