Ginger flaxseed cookies
Ginger and flaxseed cookies are my own creation. They are a great immunity booster.
Ingredients:
Flaxseed : 1 cup
Ginger : 3 inch piece
Fennel seeds : 3 tblsp
Cinnamon : 1 tblsp
Cloves : 1/2 tblsp
Cardamom : 8
Pepper : 1 tblsp
Salt : 1/2 tsp
Baking powder : 1/2 tsp
Jaggery : 4 tblsp
Oil : 1/2 cup
All purpose flour (maida) : 2 cups
Mik : 1/2 cup
Procedure:
Chop ginger and keep all the spices ready for grinding.
Powered the dry spices in a spice grinder, then add chopped ginger.
Coursely powder the flaxseed and mix it with the ground spices. Add salt and baking powder.
Melt jaggery with one tablespoon water on a low flame and add in the oil.
Pour the flaxseed mixture into the melted jaggery and mix well.
Then add flour and combine everything.
To this add milk and knead it to make a dough.
Make round balls and flatten them to make cookies.
Bake at 180 degrees for 25 - 30 minutes.
