Bottle gourd bhaji
Bottle gourd is a bland vegetable, so I have tried to give it some sweet and tangy flavours and at the same time keeping it simple.
Ingredients:
Small bottle guard : 1
Masoor dal : 1/4 cup
Oil : 1 tblsp
Mustard : 1 tsp
Curry leaves : 1 - 2
Ginger : 1 inch piece (optional)
Onion : 1
Turmeric : 1/4 tsp
Spicy dry red chilies : 1 - 2
Kokum rinds : 2 (optional)
Salt : to taste
Sugar/ stevia : to taste
Coconut : 4 tblsp
Green coriander : handful
Procedure:
Wash the dal and soak it in water for a while. Meanwhile, heat oil in a saucepan, add mustard seeds, curry leaves, ginger and onion.
Sauté till onion turns translucent, then add turmeric, split red chili and kokum.
Then add finely chopped bottle gourd, soaked masoor dal, and cover it with a lid and cook on a low flame.
When the gourd and dal is cooked add salt, stevia and freshly grated coconut, chopped coriander. Mix everything and let it cook for another minute.
