Shevio (String hoppers)

Shevio or string hoppers are fine rice noodles which can be eaten with sweet or savoury accompaniments.

Ingredients:
Matta / par boiled (ukdo) rice : 4 cups
Water : as required
Salt to taste
Coconut : 4 cups
Grated jaggery : 2 cup

Procedure:

Wash the rice thoroughly and soak it overnight for 7 to 8 hours. 

Grind the rice with water and salt to make a thick batter.

Put the batter in hollow plates or trays, cover with a lid and steam for 60 to 80 minutes.

Cut the cooked batter into pieces.

Put the pieces in the shevio maker and press.

Eat with sweetened coconut milk 

or grated coconut and jaggery.

It is also eaten with chicken curry or other curries in southern India.
