Goan egg curry


Goan egg drop curry is a coconut milk based curry similar to the vegetable caldin.

Ingredients:
Coconut : 1
Spicy dry red chilies : 4 - 5
Garlic : 6 - 8 cloves
Coriander seeds : 1 tblsp
Cumin seeds : 1 tsp
Pepper : 1 tsp
Cinnamon : 3 inch pieces
Water : as required
Turmeric : 1 tsp
Onion : 1
Tomato : 1
Green chilies : 1 - 2
Eggs : 8

Procedure:

Put coconut, red chilies, garlic, coriander, pepper, cumin and cinnamon in a mixer jar and grind them with water to make a thick paste.

Pass it through a strainer to extract the milk and keep first extract separately.

Add more water and extract the milk two more times.

Sauté chopped onion, tomato and slit green chili and add turmeric powder.

Add in the second and third extract and bring it to a boil. Lower the flame, add salt and drop the eggs one by one into the curry.

Cover with a lid and let it cook on a low flame.

After the eggs are cooked add in the first extract of coconut milk.

Bring it to a boil and switch off. Enjoy with rice or chapati.
